Little Liv’s Superfood Salad

My little sister is home from college for the Easter Holidays and wanted to get involved in metabolism boosters week, so she knocked up this Superfood Salad. What you see before you may seem to be an unusual combination of flavours, but each has its own health benefit and it makes for a very tasty lunch or snacking platter.

1/2 Avocado – boosts the metabolism by protecting the energy-producing part of cells according to Elle.
Handful Blueberries – full of great antioxidants, which your body can use to clear free radicals.
Handful Walnuts – These contain around seven grams of protein per ounce, making them the best choice for boosting the metabolism says Daniel Bartlett at Huffington Post.
1 Peeled Beetroot – Not a specified metabolism booster, but a certified superfood due to its ability to cleanse and aid digestion.
2 tbsps Pomegranate Seeds – Rich with vitamin A, B and C, all metabolism boosters.
2 Slivers of Cheddar – Cheese is never going to be a health food *sigh* but, calcium is a diet essential.
Few Squares Dark Chocolate – Don’t pretend like I need to convince you to eat chocolate, but in case you think there should be a good reason, it contains caffeine and the antioxidant catechin (the same magic ingredients are in green tea!)

Assemble everything on a plate, in a tupperware box or just leave them lingering around the house to graze on…
