Hot Apple Pie Fritters

I’ve been saying for a long time that Tuesdays are the worst. Turns out, I’m actually right. A survey recorded in 2009 suggests that 11:45 on a Tuesday morning is the most stressful time of the week. It’s an internationally recognised fact that stress can only lead to one thing, and that’s dessert.

So, when you get home today with the sad knowledge that you’ve only completed 40% of your week, I invite you to indulge in these dessert fritters. Imagine a hot apple pie from McDonald’s, and then imagine it without all the weird addictive chemicals, yum, right? I’m not going to tell you that this is in any way, shape or form one of those wonder desserts that are somehow good for you. But, it’s main ingredient is a fruit, there’s not that much sugar in them and it’s Tuesday, you deserve it.

Makes 6 fritters

3 grated apples                                                                 apples
25g porridge oats
25g sugar
2 very heaped tsps plain flour
a few good shakes of cinnamon
1 beaten egg        

  1. Put all the ingredients in to a big bowl and mix them up until you’ve got batter. If it looks like it won’t be sturdy enough to keep together when you fry it, add a little more flour.
  2. Heat about a tablespoon of sunflower oil in a frying pan, once it’s hot enough (you can test by dropping a tiny bit of mixture in, if it starts to fry straight away you’re good to go) add your first batch. I cooked them two at a time cause I like to give myself leg room for fritter flipping faux pas, but if you’ve won a pancake flipping contest and you’re confident with your frying pan skills, by all means do more at a time.

  3. Give them around 5 minutes each side in total, this is a very flexible time, you need to do this by eye really. As soon as they’re looking golden brown on both sides, they’re done.
  4. Drain any excess oil off on some kitchen towel, then serve up while they’re still hot. I’d bet some maple syrup would go down a treat with these but I didn’t have any, so I just sprinkled on some extra sugar.

Et voila! My Mum loved these and she’s not usually the sweet toothed member of the family, so they must be pretty good. I feel a little guilty for my depressing opener today, so your track recommendation today is designed to help you shake it out 2003 style. Hey, only 60% of the week to go!
