Great British Bake Off-Along: Paul Hollywood’s Focaccia

A rainy Bank Holiday weekend, a nice warm oven and some fresh bread. I had a pretty perfect time with this week’s bake-off-along. I didn’t come up with my own recipe because what could be more fitting than using one of Paul Hollywood’s? It was bread week after all.

What I did differently..

  • I only wanted one loaf, so I cut the quantities in half.
  • I shaped my dough into a circle instead of spreading it across the baking tray.Β (I have wonderful childhood memories of focaccia from an amazing bread and cheese shop in the South Lanes, I wanted to recreated it and it wasn’t rectangular)
  • I heated the oil with chopped garlic and fresh rosemary before brushing it on the dough pre-oven.
  • I added olives.

Honey Nut Rye Rolls

I experimented with a recipe for honey nut rye rolls. It’s not quite there yet, you’ll be the first to know when I’ve perfected it, but in the mean time how cute is this first attempt?!

Your track recommendation for this recipe is somewhat melancholy but perfect for the rain.
