Crisp sandwiches are a very important part of English culture, far as I’m concerned. Just like chip butties. We just like putting potatoes inside bread, I guess. The Cornish have pasties, we have crisp sandwiches. I was reminded of them recently when my friend bought a cheese and onion sandwich and some prawn cocktail crisps and brought them together to create something truly beautiful.
Prawn cocktail is 100% my favourite flavour (of Walkers, just to be clear) and they also happen to be accidentally vegan, so I figured it was time for another plant based (if you can call something with crisps in plant based) recipe.
Serves 1
2 slices crappy white bread
little bit of plant based spread
1 avocado
1/2 a red onion, chopped as fine as you can manage
salt and pepper
lemon juice
about 3/4 of a packet of prawn cocktail crisps
- Mash together the avocado, seasoning and red onion, and spread it onto one side of your bread.
- Vegan butter the other side, then top the avo with crisps and do a sandwich.
- Squash it right down so you get the happy making crunchy noise.

When I was in primary school my mum just gave me buttered bread and I stuck plain hula hoops on there… The only time I ever ate crisp sandwiches. I’m really not a fan now. I like a good egg mayo and salad (though that’s obviously not vegan friendly…)
Can’t beat a decent egg mayo, mind you I never travel with one cause they smell SO bad!
