The Vegetarian Breakfast Wrap

I have a habit that I know a lot of you will disapprove of rather deeply. I myself am not particularly proud of it. Every time I travel from Brighton to the West Country (which seems to be a bloody lot this year), I have to have a McDonald’s breakfast wrap at Rownhams Services. This is me, Cate, lover of cooking from scratch and eater of only free range, organic eggs. Hater of big food companies just like McDonald’s that are making our babies obese and screwing their workers. What comes over me? I don’t know. All I know is that I think it’s delicious. Creamy Spaghetti with Crispy Aubergine and Roasted Red Peppers

Regular readers will remember that I recently attempted to have aubergines and my taste buds make friends after a lifetime of estrangement. I did this by following a few recipes and doing lots of reading, and it worked. I actually kinda like aubergine now. So much so that I wanted to try coming up with a recipe myself. If you need a 15 minute meal or a one pot wonder, I’m really sorry buddy but you’ve landed on the wrong recipe, this is kinda long winded. But guys, I would not be publishing this if it wasn’t insanely delicious, so if you’ve got a little time and can be arsed with using more than one pan to cook your dinner today, you will not be disappointed with this dish. Spiralised Cucumber with Tabasco Yoghurt Dressing, Feta and Pomegranate

If you’re big on hot sauce, you might wanna stay tuned on Cate in the Kitchen over the next few days because I’m using Tabasco sauce to have a whole lot of #FunWithFlavour – a three course meal of fun. That’s right, three courses. Tonight I’m introducing you to my starter, tomorrow you’ll meet the main course and on Monday you’ll be drooling over my dessert – excited? Me too. Before Tabasco invited me to take part in this awesome campaign, I’d never considered it as more than a very welcome addition to my favourite pizzas; so it was super fun to come up with some creative ways to use it in three different courses.
