I’m back, rather later than I hoped I might be, with another recipe that I’ve been talking about no end on social media without telling you how to make it in your own kitchen. Perhaps a pattern is developing and this is how things will be for a little while (see: dill and sweet potato cake). This is based on Nigella Lawson’s Marmite Spaghetti, but – and I really never thought I’d get the opportunity to say this about a recipe of hers – I’ve actually taken it further in its likeliness to give you a heart attack. This post is in collaboration with Bertolli I’ve had a big phase lately of avoiding pasta. I think it’s a side effect of trying to lose weight (I’m three stone down, one stone to go) because it’s so heavily drummed into us all that delicious things like bread and pasta immediately nudge you towards an inevitable personal obesity crisis. Which is silly. I’ve had a chat with myself, and carbs are well and truly, with conscious effort, back on the menu. Bertolli asked me if I was up for putting my own spin on one of Gennaro Contaldo’s pasta recipes using their Bertolli with Butter. This was my perfect excuse to get back on that pasta wagon, buy that fresh filled pasta, and douse it in butter. Vegan Creamy, Garlicky, Lemony, Green Pasta Sauce

I have made this pasta dish twice this week because it’s super easy and it makes me feel smug to eat two types of greens in one go. It’s also a pretty great go-to for me because each of these 5 ingredients are things that I almost always have in.  The pictures I’ve managed to get of this recipe are just not ideal, but my desire to share it with you overpowers my desire to look like I take really great pictures of food so whatever. Here we are. I should warn you that the 1 garlic clove in this sauce is raw, and therefore packs a punch both flavour-wise and odour-wise. If you’re not into that, just go ahead and skip it. Personally, I love it. And raw garlic is increds good for you, so that’s why it’s in there. You’ll notice that I’m using soya cream again (I used it in my squash pasta sauce last week).
