Last year, I celebrated the onslaught of autumn by publishing a grilled cheese recipe (grilled blue cheese on rye with autumn slaw), and I think I’ve just decided that I would like for that to be an annual tradition. This post is in collaboration with Warburton’s When Warburtons approached me to help spread the word about their new protein range, a rather stubborn idea struck me and wouldn’t go away. They wanted a recipe that would showcase their new Protein Bread that was packed with.. well.. protein. When I spoke to my friends a lot of them said things like “oh yeah, something like chicken and avocado might be nice” or “you should do something with smoked salmon”. Whilst the above are both delicious and protein heavy in a sandwich, I wanted to use this challenge to prove how protein-y a vegan sandwich filling can be. Fancy Vegan Crisp Sandwich (it’s British Sandwich Week)

  Crisp sandwiches are a very important part of English culture, far as I’m concerned. Just like chip butties. We just like putting potatoes inside bread, I guess. The Cornish have pasties, we have crisp sandwiches. I was reminded of them recently when my friend bought a cheese and onion sandwich and some prawn cocktail crisps and brought them together to create something truly beautiful. Prawn cocktail is 100% my favourite flavour (of Walkers, just to be clear) and they also happen to be accidentally vegan, so I figured it was time for another plant based (if you can call something with crisps in plant based) recipe. Serves 1 2 slices crappy white bread little bit of plant based spread 1 avocado 1/2 a red onion, chopped as fine as you can manage salt and pepper lemon juice about 3/4 of a packet of prawn cocktail crisps Mash together the avocado, seasoning and red onion, and spread it onto one side of your bread.
