Vegan Carrot, Parsnip and Leek Bhajis

More often than not, I plan my dinner in the morning while I’m at work. I’ve tried weekly meal planning on Sundays, but the lack of spontaneity frustrates me and I find I don’t enjoy cooking nearly so much when everything has been laid out so far in advance. If I search Pinterest, BBC Good Food and my soul for inspiration and still come up empty, there’s only ever one thing for it: The ALDI Super 6. Every week, there are six fruits and vegetables on special offer in ALDI right at the front of the supermarket. I tend to just wander down on my lunchbreak (considerably earlier than most thanks to my weird working hours) and stare at the Super 6 ingredients until my brain turns them into a dinner. Creamy Red Pesto and Pancetta Buckwheat Pasta

I second guessed myself before writing this up as a recipe, because who in their right mind doesn’t already know how to make pesto pasta? However, I’ve decided to go ahead because recipes like this – those with a tiny handful of steps and ingredients – tend to fare far better with most of you and actually make it into your kitchens. I happen to have worked with ALDI (I know, finally, right?) on this particular dinner. They sent me over some vouchers so that I could get creative with the special buys and super 6 sections to bring you a super simple supper that you can quickly, easily and cheaply recreate at home. Happy Sunday

I appear to have neglected Happy Sunday for a few weeks. This is entirely unintentional, time has just been sprinting away from me at a speed so impressive that I haven’t even attempted to claw it back. That happens in the summer, the days get longer but fill up so much quicker. I like it that way. As is to be expected from such a long absence, the things I need to tell you about have been stacking up like a pile of dirty dishes. So this is something of a bumper issue. Again, I like it that way. Let’s get on with it, shall we? It doesn’t get much more Brighton than vegan craft beer, and last week I had the pleasure of chugging a few bottles of the stuff on the beach of all places.
