Creamy Vegan Cheese and Kale Linguine

Vegan Cheese and Kale Linguine

Much like literally all good pasta sauces ever, this one leans heavily on being brought together by the liquid gold that is reserved pasta water. I’ve eaten this in a few different forms about five times over the past couple of weeks, alternating vegetables depending on what’s in the fridge. Ingredients come from cupboard to plate in about 15 minutes at an absolute maximum, let this be a permanent weeknight staple if you happen to be inclined towards vegan eating. Serves 1: 75-100 linguine (or spaghetti, or.. whatever pasta you happen to feel like making today) 1 big handful kale leaves 1/3 block vegan cheddar, grated (both Violife and ASDA cheddar alternative are decent) 2 tbsps nutritional yeast  1 tbsp vegan spread (pure soya is my go-to of late) pinch of mustard powder or tsp actual mustard if you have it plenty of salt and pepper, to taste Put the pasta and kale into a saucepan, cover with boiling water, season with salt, and cook according to pasta packet instructions. I regret to inform you that you’re not getting the best of me today. I’m writing this, straight off the back of a 5 hour studying session, while my roast cooks. My brain is nothing short of fried. I don’t know if I’ve actually officially talked about it on the blog yet, but I’ve started studying for a TEFL qualification. For those that aren’t aware: TEFL stands for Teaching English as a Foreign Language, which will enable me to teach English in foreign countries. It’s busting my balls. Once I pass, I think I’m going to write a little about my historic struggles with education and learning, because it’s gonna feel like a really huge achievement that I’ll probably want to talk more about and reflect on – but for now just trust me when I say this is the biggest thing I’ve pushed myself to do in years. Happy Sunday

I am so poorly. I haven’t been this ill in months and months and months. I didn’t leave the house this whole weekend apart from to go food shopping yesterday morning. I haven’t even been to the cinema, I’m that lurgy-ish. Thankfully, I have a Thomas, who has stayed in with me all weekend feeding me Flamin’ Hot Cheetos and watching Ramsay’s Kitchen Nightmares and playing me at Harry Potter Trivial Pursuit even though he knows I’ll win by miles. As I write this, he’s gone all the way over to the other side of town to buy me some peach juice because it’s my favourite. I’m feeling very fortunate despite my bad luck in contracting whatever this virus is. Just because I’ve been sofa-ridden this weekend does not mean I don’t have things to show you from this week. We’ve plenty to talk about, as always. Starting with a treat we discovered at The Real Patisserie on Wednesday.
