Baked BBQ Aubergine

There’s no direct replacement for meat come BBQ season, I myself am preparing to cave on the mostly-plant-based front as soon as it’s sunny enough to take hot coals down to the beach and smoke out anyone in a 5 metre radius. There are, however, several worthy alternatives. Aubergine is one of them. It’s a naturally smoky vegetable, and one that gratefully absorbs any flavour you introduce it to – making it particularly susceptible to a good BBQ rub. I was in the mood for a fancy one (feel free to recommend if you have a fav) but ASDA had only the Nando’s Peri Peri BBQ rub to offer, which did me just fine. Score as deeply as possible without cutting through the flesh for best results, and remember that aubergine’s a bastard for absorbing oil – so you’ll need more than you’d need for any other vegetable you’re used to baking in this way. Smoky Aubergine and Lentil Ragu

It’s absolutely pissing it down this morning, so I thought some comfort food might be appropriate. We appear to have just about reached “it’s gonna be rainy and repulsively windy day in, day out for months now and there’s nothing you can do about it” season in the South of England. This, I’m sure, is where we’ll stay for some time to come. While we’re here, we should probably eat some delicious hot food that doesn’t look particularly pretty but tastes like an actual cuddle. First, credit where credit is due. The author of the original recipe is the gorgeous and ever so talented Rosie Birkett, and I first saw it in this months issue of BBC Good Food. Creamy Spaghetti with Crispy Aubergine and Roasted Red Peppers

Regular readers will remember that I recently attempted to have aubergines and my taste buds make friends after a lifetime of estrangement. I did this by following a few recipes and doing lots of reading, and it worked. I actually kinda like aubergine now. So much so that I wanted to try coming up with a recipe myself. If you need a 15 minute meal or a one pot wonder, I’m really sorry buddy but you’ve landed on the wrong recipe, this is kinda long winded. But guys, I would not be publishing this if it wasn’t insanely delicious, so if you’ve got a little time and can be arsed with using more than one pan to cook your dinner today, you will not be disappointed with this dish. Also, in my defence, it does only have 5 ingredients. That’s a winner, right? I think it’s down to the amount of garlic I used – like 4 cloves for one serving, don’t be afraid.
