I’ve said it before, and I’ll say it again because it’s always relevant: my best recipes are always completely unplanned and born out of a desire to use up a few ingredients to make room in the fridge, or more often than not these days a desire to use whatever small amounts I have in to avoid having to go food shopping in my lunch break. I wasn’t expecting this to be anything all that special. This was half an avocado that I’d forgotten about at the back of the fridge from last Monday night that somehow hadn’t rotted beyond recognition, the tiny little portion of peas that had been clogging up my freezer drawer for too long and feta that had seen better days.   Crisp sandwiches are a very important part of English culture, far as I’m concerned. Just like chip butties. We just like putting potatoes inside bread, I guess. The Cornish have pasties, we have crisp sandwiches. I was reminded of them recently when my friend bought a cheese and onion sandwich and some prawn cocktail crisps and brought them together to create something truly beautiful. Prawn cocktail is 100% my favourite flavour (of Walkers, just to be clear) and they also happen to be accidentally vegan, so I figured it was time for another plant based (if you can call something with crisps in plant based) recipe. Serves 1 2 slices crappy white bread little bit of plant based spread 1 avocado 1/2 a red onion, chopped as fine as you can manage salt and pepper lemon juice about 3/4 of a packet of prawn cocktail crisps Mash together the avocado, seasoning and red onion, and spread it onto one side of your bread. Spicy Tomato Jam and Avocado Savoury-ish Pancakes

We covered sweet pancakes at the beginning of the week, and we covered them very, very well indeed. So I think it’s about time we wandered into savoury pancake territory, don’t you? I firmly believe (for today, at least) that it would be cruel to serve pancakes without just a little sugar though, so we’re having tomato jam with our avocado. Spicy, sweet, delicious tomato jam. Ugh, I can’t wait for you to try these, really I can’t. A lot of tomato jam recipes will tell you to peel your tomatoes. I’m really sorry, but I just can’t be arsed. I don’t think it’s made a huge difference. You can go ahead and choose a different jam recipe for this if you’d like, I’m not gonna stop you putting more effort into your food, but this one works just fine. I promise.
