Vegan Roasted Butternut Squash Pasta Sauce

One of my most popular and most cooked (to my knowledge) recipes to date is my roasted butternut squash pasta sauce. I turn to it frequently when I want something cosy, filling and, you know, orange. It can’t be just me that truly craves orange food in autumn and winter. Whilst delicious, my original recipe is completely inappropriate for Veganuary. It relies on parmesan and wensleydale for its extra creaminess and delicious flavour. I couldn’t bear to think of the month of January without this dinner in it, so I thought I might as well veganise it. I’ve put two new friends to work in this recipe, so from a novelty perspective this is a total dream for me. First new buddy: nutritional yeast. Butternut Squash Soup with Goats Cheese

It’s been a week of woolly jumper weather. British families up and down the country have had the “shall we put the heating on?” conversation at least three times. I’ve been wandering around the house a lot talking to my dog about how chilly I am, occasionally muttering “brr” as I put the kettle on. This week has also been Freshers Week here in Brighton, and (I think) in all the University towns. I’ve previously ignored this week of the year, celebrating it by staying inside as much as possible, avoiding all the clubs and public transport. This year though, I’m acknowledging it. This here recipe is a one pot meal, a cheap meal, and a really bloody easy meal. This one’s for you, students. All I ask in return is that you please, please keep the noise down on weekdays. Butternut Squash and BBQ Bean Salad | Vegan

This was a real quick and desperate meal I threw together with the limited ingredients I had knocking about. As a lot of you will know if you follow me on Twitter and Instagram, I spent last week in the beautiful St.Ives, Cornwall – and as you’ll all know, cooking dinner the day you get back from anywhere is a total nightmare. I drew inspiration (majorly) from my borlotti bean bake recipe that I enjoyed so much and so frequently recently ’cause it’s so easy to make happen and pretty healthy to boot. I’m hoping this is a pretty easy one for most of you to throw together with what you’ve got in your cupboards, but if it’s not, you should totally tell me!
