Popeye, the internationally renowned cartoon sailor, had the right idea when it came to greens. Long before superfoods were even a thing, he was chugging away at can after can of iron-rich spinach to make his biceps level up Mario-style. Despite not being a nautical hero on a never ending quest to impress a lady named Olive Oyl, I do need a good dose of iron every day – especially now. Today marks the beginning of my 6 weeks of veganism. You heard me correctly, I am doing the vegan thing. I recently watched Vegucated on Netflix hoping to learn a little more about the wave of veganism that is sweeping the nation, and see how three New Yorkers fared without animal products for six weeks. The facts and figures that made up the argument for the vegan diet ranged from Co2 levels to scientific research into the causes of disease in the modern world and all in all they were pretty convincing. Chicory Green Salad

There’s something about Spring that makes me want to pack as much green in to my dinner as possible, a fresh meal to compliment the fresh air. This is potentially borderline obsessive compulsive green but as the great Ron Swanson once said, “never half-ass two things, whole-ass one thing” I don’t want to say this is a whole-ass green salad because I feel like that doesn’t have quite the right ring to it, but I’m sure you get my drift. Chicory is a real good’un, it reduces inflammation in the body, supports digestion and speeds up your metabolism – its also full of antioxidants. You’ve also got some cucumber in there with a nice high water content, my loyal friend avocado, and a pear makes a curveball appearance. This one’s really good for you, if you’re going hardcore detox vibe you can skip the dressing, but I drizzled it with mustard vinaigrette just after taking the picture. Three Chilli Salmon and Stir-Fried Broccoli with Cucumber & Mango Salad

This looks amazing, this tastes amazing, this is amazing. And I shall tell you for why, the oil found in salmon has been shown to cut leptin levels and help your body process foods more effectively and of course it’s full of our good friend omega 3, also salmon when cooked to perfection (which this is, of course) is pretty much unbeatable.  I should probably explain the three chilli concept, in this dish I used fresh and organic chillis, chilli flakes, and chilli oil – as I’ve mentioned this week, hot and spicy ingredients are great for picking up the pace of your metabolism. The water content in cucumber (similar to melon) is what makes it a metabolism winner, and mango just adds inexplicable deliciousness to the whole vibe. Overall, I’ve done a pretty stand up job of making this entire meal metabolism conscious so give it a try!
