5-Ingredient Carrot and Feta Fritters

I’m of the opinion that fritters are really quite good at capturing the tail end of summer and the very beginnings of autumn. They’re best served with fresh, crunchy salad, but are themselves shallow fried, edging us in to the comfort of stodgier treats to come. Plus, they’re orange. Anything that practically brings itself together and has an ingredients list I can count on one hand is always alright by me, and this ticks both of those boxes. You can whip up a quick salad while the fritters are frying and have the whole shebang on the table in 15-20 minutes, if you’re inclined towards speedier kitchen habits. If I could give you two tips, they’d be the following: Serve the fritters with sweet chilli sauce, or a spicy chutney, anything sweet and dippable, it brings everything together beautifully. When clearing up afterwards, pour excess oil into a container for recycling (this is a thing) and then mop up the very last dregs with kitchen towel before attempting to wash up, to avoid greasy slicks …

4 Quick, (Mostly) Vegetarian Dinners for Spring

Typically, the weather is yet to make up its mind about which season we’re currently experiencing. I’ve been pushing on with spring regardless under the guidance of the calendar alone – sometimes eating outside, sometimes on the sofa under a blanket wondering how long it’s been since I’ve seen the sky. That’s April for you. Quick, easy dinners that can be rustled up on a weeknight after a long day at work were my most requested post last year. This year (now that I have a proper job where I have to actually use my brain) that’s all I have time for anyway, so you can expect plenty of these in the months to come. Spaghetti with Tuna, Capers and Lemon Boil 150-200g spaghetti in salted water according to pack instructions. Reserve about 1/4 cup of pasta water just before draining. Hot Pickle Pasta

I’m not expecting to get everyone on board with this one. I’ve had big doubts as to whether I should even be posting it. However, the point of this food blog has always been to talk about what I’m eating in my kitchen and, like it or not, I’m eating a lot of this right now. The ‘this’ that I am referring to is a pasta dish with crunchy pickles, spicy jalapenos and a creamy cheese sauce. My darling friend and person I run many an idea by, Rosie, said she could not get down with the tangy/creamy thing. A few people on the social medias have said they could potentially be on board, and Tom and me are already big fans. On balance, I figured it was worth putting out there.
