Great British Bake Off-Along: Paul Hollywood’s Focaccia

A rainy Bank Holiday weekend, a nice warm oven and some fresh bread. I had a pretty perfect time with this week’s bake-off-along. I didn’t come up with my own recipe because what could be more fitting than using one of Paul Hollywood’s? It was bread week after all. You can find the original recipe here. What I did differently.. I only wanted one loaf, so I cut the quantities in half. I shaped my dough into a circle instead of spreading it across the baking tray. (I have wonderful childhood memories of focaccia from an amazing bread and cheese shop in the South Lanes, I wanted to recreated it and it wasn’t rectangular) I heated the oil with chopped garlic and fresh rosemary before brushing it on the dough pre-oven. I added olives. In other bread news.. I experimented with a recipe for honey nut rye rolls. Rosemary & Garlic Focaccia – the calm before the feast

The Easter Bank Holiday weekend is, at last, upon us. As you all know, holidays bring family from far and wide which can mean only one thing – feast! I’m in charge of what gets put on the table this weekend so tonight has been a flurry of preparation and planning. Being super busy with working out how I’m going to fit in my entire menu tomorrow, I am sorry to admit I wasn’t brave enough to attempt creating my own recipe for focaccia, bread is an easy one to screw up.
