One Pot Sausage, Caramelised Fennel and Lemon Pasta

There were about six million sausages left over from a BBQ this weekend and, having exhausted my patience for eating them with gravy (something I didn’t think it possible to tire of, I’ll admit) I was craving something just a little bit lighter and brighter. The lemon and herbs added right at the end of this recipe allow it to just about retain a spring/summer feel, whilst being comforting enough to suit the reality of the weather we’ve actually had to endure this season. It may not have escaped your notice that I have used tory pasta for this dish. Specifically, ditaloni regati from Waitrose. I’m confident pretty much any shape you have in will work (realistically, what is the worst that could happen), but I reckon the smaller, the better. You might also clock that I haven’t used any garlic, that is literally just because I could not be arsed to chop any. I’m quite sure that if you choose to it will only improve matters. The Christmas Leftovers Omelette

That’s it; turkey almost finished, Christmas cards no longer coming through the post at a rate of knots, telly offerings returning to their usual dullness (although I can’t say much for the festive entertainment TV-wise this year). This is December 27th, not Boxing Day, not quite time to go back to work, I’m in limbo. So naturally, this morning I attempted to cure my longing for Christmas magic with a spot of breakfast. We had some roasties left over in the fridge and if there’s anything I’ve learned in my time on this earth it’s that all leftovers go great with egg. Therefore an omelette I did make. I happened to have parsnips, potatoes and sprouts to muck about with and used roughly the amount you see in this bowl. This recipe is to be used as an extremely rough guide, I’ve filled mine with stilton and rosemary jelly, but if you had brie and cranberry sauce knocking about then throw that in there instead.
