Lychee and Lime Sorbet

With Summer slowly but surely approaching, I’m running out of ways to avoid ice cream. So with this recipe I embrace the frozen dessert world with the best alternative, sorbet. It’s very sugary, yes, but is way lower in fat due to its lack of artery-clogging dairy products. This is the first time I’ve ever tried my hand at sorbet, I don’t have an ice cream maker or any real knowledge of how you approach making frozen desserts without the correct equipment. So if you know loads about the science of sorbet, please feel free to correct my (probably incorrect) methods, I will be very grateful to hear from you. This being an experiment, I only made a small amount, but by all means multiply the ingredients to make more – and let me know how it goes! Carrot and Orange Cleanse Cocktail

It’s a beautiful day here in Brighton, I’d forgotten what colour the sky was! Having had an alcohol free evening last night I was thankfully lacking a hangover this morning, although it being a bank holiday weekend I know some of you may not be so lucky. And so, whether you’re in desperate need of some hair of the dog or you’ve waited til Saturday to indulge in some alcohol, this is the perfect cocktail for you. I bought some carrot juice at the supermarket last week, I tried it and I have to be honest, I did not love it. But there’s no bigger crime than waste and so I had to think of how to finish it up, which thankfully led me to the discovery that it tastes amazing with a few additions.. namely gin. Perfect Guacamole (every time)

Guacamole is a staple side as far as I’m concerned. I struggle to think of a savoury dish that I would not want to eat guacamole with – and quite right, too! Avocados are packed with good fats, vitamins and fibre, and they reduce cholesterol too, so you can feel much better about keeping a share pack of Doritos to yourself if you have this tasty dip to go with it (kidding I don’t do that anymore). 1 avocado 3 cloves garlic – chopped to within an inch of its life Few shakes chilli flakes (Say it out loud it sounds cool) Fresh herbs – chopped.. see above Good squeeze of lime juice Little bit of seasalt This is only gonna work if your avocado is ripe, give it a little squeeze to find out, if it gives, its guac time.
