Thyme and Lime Roasted Chicken with Baked Sweet Potato

As far as I’m concerned, sweet potato is one of the most under rated staple foods in this country. Compared with your average potato, they contain less calories and carbohydrates, and are packed with antioxidants that are linked to disease prevention. And what do they have to do with metabolism boosters week? I hear you ask, well, Skinny Gene Project says “The lower carbohydrate content and the bonus fiber  content keeps your blood sugar stable, while satisfying your appetite on less calories. The combination of these two factors (low calorie and added fiber) helps keep your body at a healthy weight and your metabolism functioning at its best.” They also taste way better, and whatever potato can do, sweet potato can do better. Which leads me to today’s recipe, this is a winner on so many levels. I’ve added extra heat to the chicken and the yoghurt dressing because it’s now widely known that spicy foods can considerably increase your metabolism. Green Tea, Melon and Ginger Cocktail

Before I begin with the details of this recipe, I will admit that I am not a fan of Green Tea, I tried it when the hype began and it just wasn’t my cup of tea (excuse the pun – actually don’t excuse the pun it’s a great pun.) So when approaching the task of creating this recipe I was somewhat apprehensive, but I promise hand on heart that this tastes fantastic. The reason I forced the challenge of green tea upon myself is, of course, this week’s theme: metabolism boosters. Having done a little research on ingredients that really get the metabolism in gear, I literally could not escape it, it appears everywhere you look. Countless studies have been made to work out what’s going on in that mug, it contains caffeine which in itself has been proven to increase metabolic rates, and the antioxidant catechin – those two working together appears to be what’s making the magic happen. Pomegranate Cocktail

My little sister is a little hungover today, so an attempt to coax her towards the hair of the dog method may be in order. Not only do I want to give her just enough alcohol to transform her back to her human self, I thought it might also be nice to give it a hint of healthy. I had some POM Wonderful Pomegranate juice in the fridge and as we all know, pomegranate is a certified ‘superfood’. (if you don’t trust me on this, I’m sure you’ll take the all knowing Guardian’s word for it). This stuff is a little expensive depending on where you buy it, but it makes a delicious addition to pretty much anything with ice in it and its healthy so don’t be tight.   I happen to be lucky enough to have a super-hippy for a mother who rents an allotment generating an abundance of organic green things, so the mint I use in this recipe is 100% fresh and delicious – however if you don’t have my good …
