It’s 4th February – 4 days post Veganuary – and I am still quietly plodding along with vegan cooking and eating. In previous years, I’ve been sick to death of the restriction by the end of the month and delved back into mozzarella and chorizo with reckless abandon as soon as the clock struck midnight on January 31st. I don’t know what’s different about 2019, but I’ve not felt particularly restricted at all and I’ll roll with it for as long as I feel like it. This weeks recipe is my current most favoured lunchbox situation. Vegetables are roasted in advance and placed into a plastic container. Cheese is grated on top, and hot sauce is drizzled over. This, when microwaved at the office come lunchtime, is the height of comfort. You can roast quite literally anything you fancy and in any amount. Last Wednesday night, I drank two bottles of wine and got about three hours sleep. On Thursday, I wasn’t feeling or looking so hot. Thanks to the magical powers of make up and my increasing ability to put together actual adult outfits that don’t involve sportswear, I managed to leave the house for my lunch date and generally be in public in an acceptable way despite my killer hangover. I think what I found in the pub that day was a real life hangover cure. Open Chicory Sandwiches

It’s British Sandwich Week here in the UK, and as much as I love a bacon sandwich with everything (everything being hash browns, extra bacon, maybe a couple of eggs and a litre or so of ketchup) that is not my game anymore. So, I’ve kind of skipped the bread part and overlooked the entire concept of a sandwich with this recipe. But before you call me a cheat and throw things at me, please see the definition of an open sandwich given by google: And that’s exactly what this is, there is no top slice of bread, and the definition does not specifically specify that the bottom slice is bread. So I will call this an open sandwich and you will applaud me for my loop hole finding skills, I should work for Gary Barlow and the gang.
