Bake Off Bake Along | Pastry Week

So.. I may have consumed around a bottle and a half of wine before attempting this weeks Bake Off Bake Along. In my defence, I was at my Grandmother’s house for a sort of pretend Christmas before my little sister sods of to Canada for two years. When my sister, my Mum and I arrived just after lunchtime, the second half of the family were so drunk that there was nothing to be done but get caught up ASAP. By the time I remembered I was supposed to be making a hand raised pie, I was in absolutely no fit state to be making a hand raised pie. Given the circumstances, I feel that this had potential to go a lot worse. I mean, I have actually turned out something edible this week (a triumph, after last weeks abomination that I’m trying desperately to forget about), and it even looks half decent if captured from the right angle. Bake Off Bake Along | I Baked Buns Hun

I hate bread week. I hate it with a fiery passion. I’ve tried a few times in my short adult life so far to be a bread baking person, and each time I’ve eventually given up. I don’t know what my problem is exactly. It’s possible that I’m lacking patience at the kneading stage, that nowhere in my old house was warm enough to prove dough, that I was probably using out of date yeast half the time, or even that all of these things are true. I can’t know for sure what the exact snag was, but whatever it was really did me in. Loaves were misshapen or they didn’t rise or they were doughy and raw in the middle. I’m sure you understand, therefore, that I tend to give bread of the home baked variety a wide berth. As I’m sure you can guess, I didn’t even consider attempting the showstopper this week. If I can’t manage a single loaf of bread, I don’t fancy my chances plaiting three different kinds around one …

Great British Bake Off-Along: Paul Hollywood’s Focaccia

A rainy Bank Holiday weekend, a nice warm oven and some fresh bread. I had a pretty perfect time with this week’s bake-off-along. I didn’t come up with my own recipe because what could be more fitting than using one of Paul Hollywood’s? It was bread week after all. You can find the original recipe here. What I did differently.. I only wanted one loaf, so I cut the quantities in half. I shaped my dough into a circle instead of spreading it across the baking tray. (I have wonderful childhood memories of focaccia from an amazing bread and cheese shop in the South Lanes, I wanted to recreated it and it wasn’t rectangular) I heated the oil with chopped garlic and fresh rosemary before brushing it on the dough pre-oven. I added olives. In other bread news.. I experimented with a recipe for honey nut rye rolls. It’s not quite there yet, you’ll be the first to know when I’ve perfected it, but in the mean time how cute is this first attempt?! Your track recommendation …
