Purple Carrot + Golden Beet Tahini Salad

Earlier this week, we talked about purple carrots because I was obsessed with their suitability for Halloween. I figured that seeing as you’d gone to the trouble of reading about them, I should probably give you a little extra inspiration as to how you might use them. Please don’t be put off by the word salad. There’s not a hint of summer lightness in this recipe, I promise. It’s all about that room temperature roasted beet vibe, the warm and cosy flavours of autumn. I very much like the idea of eating this on Halloween before consuming preposterous amounts of sweets and chocolate. I mean in reality I’m an adult and Halloween is a Saturday so I’m probably not going to eat all that much candy but I will drink a terrifying amount, and alcohol is full of sugar. Is This Vegetable Halloweenier Than A Pumpkin?

I feel like it has real potential. I mean, purple and orange? Come on. That is so halloween. We’re talking about purple carrots, by the way. I got a few purple carrots in my Abel & Cole veg box this week, and it immediately struck me that they would be awesome for Halloweeny things. So I just sort of wanted to tell you about them, plant that idea in your mind too, you know? I’ve done a li’l bit of research on purple carrots and it turns out that purple is the original, proper carrot colour. Who knew? According to this internet situation, all carrots were purple before the 17th century. Did you know that? I had no idea. Why did they turn them orange? Purple is so much cooler? I have so many questions. Apparently they also have a “higher antioxidant capacity” than orange carrots. Do you know what that means? I don’t.
