Goats Cheese and Red Onion ‘Welcome Home’ Tart

This week, my Mum returned home from Port Eliot Festival. She had a wonderful time doing yoga outside, eating kedgeree (pictured) made by Dick and James Strawbridge and watching Beth Orton. Being all the way out in lovely Cornwall, it was a long old drive home, so I thought it might be nice to have something ready for her to eat as soon as she got home. This tart is made from all of her favourite flavours, my Mum’s the sort to go for goat cheese on her pizza instead of ham and pineapple – in short, she has a much classier taste in food than her daughter. Packed Peanut Noodles

Mornings suck, and trying to get my life together in time to pack some lunch before work is not always a realistic goal for me. Noodles are amazing, their speed and superiority have made this meal a staple throughout the working week. It takes literally 10 minutes from start to finish and can be knocked up after you’ve had your tea and sit in the fridge over night. If you are making it the night before, you might want to drizzle a little bit of extra oil in there in the morning just to spruce it up a bit – I usually forget and don’t mind them on the dry side but I know there are some fussy types in this world.
