Spring Pasta Salad (perfect for packed lunch)

This month, Cate in the Kitchen turned three years old. I didn’t bake a cake, I didn’t write a blog post, I didn’t even really pay my own personal anniversary much notice until the past couple of days. When I got to thinking, I realised that this blog is a really different space than it was three years ago. I’ve grown as a writer, I’ve widened the net a little in terms of the content I produce here, and I’ve almost completely stopped publishing recipes – which was pretty much my sole purpose when I first started blogging. I don’t know why that is, exactly. It could be that consistently publishing new recipes takes a shit tonne of planning time that I no longer have, or that recipes just don’t do so well when it comes to traffic, or that my creativity is being channeled elsewhere. Purple Carrot + Golden Beet Tahini Salad

Earlier this week, we talked about purple carrots because I was obsessed with their suitability for Halloween. I figured that seeing as you’d gone to the trouble of reading about them, I should probably give you a little extra inspiration as to how you might use them. Please don’t be put off by the word salad. There’s not a hint of summer lightness in this recipe, I promise. It’s all about that room temperature roasted beet vibe, the warm and cosy flavours of autumn. I very much like the idea of eating this on Halloween before consuming preposterous amounts of sweets and chocolate. I mean in reality I’m an adult and Halloween is a Saturday so I’m probably not going to eat all that much candy but I will drink a terrifying amount, and alcohol is full of sugar. Review | Abel & Cole NEW Super Salad Box

Abel & Cole are a brand that I can totally get behind. Their boxes promote cooking with organic, local, seasonal produce without having to leave your house to find it. What’s not to love? So when I was invited to try their new super salad box, I literally jumped at the chance.  I guess the first thing to get out of the way here is cost, because for a lot of people that’s what everything boils down to. The super salad box is £19.50, what you’re getting for that price is the fresh and organic ingredients for three delicious salads. Personally, it’s not something I could afford to get on the regular. But if you’ve got the income, I really think you should look at getting a few of these boxes this season – especially considering its the same price as a cheeky Chinese takeaway. Here’s why..
