Tinned Salmon Niçoise

For all those wondering how the low carb thing is going: it’s going. I was pretty strict with it for a couple of weeks, lost about half the weight I was looking to lose, and now I’ve chilled out on it a little (as planned). I’m keeping most meals low in carbs, but indulging in fancy doughnuts on a Saturday or gourmet burgers on a Wednesday if that’s where I’m at. Salmon Three Ways

We should be eating more fish, fish is good. If you want to learn more about why oily fish is the answer to many of life’s woes, Fish is the Dish have some great information resources here.  This week, I’m staying away from home and in typical Cate fashion I forgot to pack my camera. So in the absence of high quality photography, here are three quick recipes I knocked up over the past week and posted to Instagram. Supermodel Salmon Salad – Serves 1 1/2 cucumberfew strips smoked salmon50g fennel juice of half a lemon Peel the cucumber as you usually would, then discard the skin and keep on peelin’ on into a bowl until you hit the impossible to peel centre. Three Chilli Salmon and Stir-Fried Broccoli with Cucumber & Mango Salad

This looks amazing, this tastes amazing, this is amazing. And I shall tell you for why, the oil found in salmon has been shown to cut leptin levels and help your body process foods more effectively and of course it’s full of our good friend omega 3, also salmon when cooked to perfection (which this is, of course) is pretty much unbeatable.  I should probably explain the three chilli concept, in this dish I used fresh and organic chillis, chilli flakes, and chilli oil – as I’ve mentioned this week, hot and spicy ingredients are great for picking up the pace of your metabolism. The water content in cucumber (similar to melon) is what makes it a metabolism winner, and mango just adds inexplicable deliciousness to the whole vibe. Overall, I’ve done a pretty stand up job of making this entire meal metabolism conscious so give it a try!
