Creamy Vegan Kobucha Squash and Sausage Red Pesto Penne

This week, I found a kobucha squash (first of the season) nestled in my veg box next to a big bag of spinach and this recipe was born. I used veggie sausages simply because they’re my current favourite source of protein, wholemeal as opposed to standard pasta because the nuttiness lends itself so beautifully to the autumn vibes and red pesto to round off the sweetness of the squash. I’m breaking a few rules of mine in terms of pan usage here. If I can get away with it, I’m very much a one pan girl. Here, we use at least three. There’s pasta to be cooked, an onion to be caramelised and squash and sausages to be baked. Sometimes, it just can’t be avoided. This was my first time using Oatly creme fraiche (always one to adopt plant based alternatives as and when I can, as you know) and I was impressed, it’s definitely an appropriate replacement for dairy creme fraiche in pasta dishes for me. Happy Sunday

I appear to have neglected Happy Sunday for a few weeks. This is entirely unintentional, time has just been sprinting away from me at a speed so impressive that I haven’t even attempted to claw it back. That happens in the summer, the days get longer but fill up so much quicker. I like it that way. As is to be expected from such a long absence, the things I need to tell you about have been stacking up like a pile of dirty dishes. So this is something of a bumper issue. Happy Sunday

I regret to inform you that you’re not getting the best of me today. I’m writing this, straight off the back of a 5 hour studying session, while my roast cooks. My brain is nothing short of fried. I don’t know if I’ve actually officially talked about it on the blog yet, but I’ve started studying for a TEFL qualification. For those that aren’t aware: TEFL stands for Teaching English as a Foreign Language, which will enable me to teach English in foreign countries. It’s busting my balls. Once I pass, I think I’m going to write a little about my historic struggles with education and learning, because it’s gonna feel like a really huge achievement that I’ll probably want to talk more about and reflect on – but for now just trust me when I say this is the biggest thing I’ve pushed myself to do in years.
