Crunchy Fennel & Apple Slaw

Earlier in the week, we saw what was possible with the spiraliser blade on this nifty new machine. Today, we explore its shredding and slicing capabilities. I am a lover of coleslaw. It’s such an easy and delicious way to pack fresh, raw veggies into your diet. I’m a big fan of the three ingredient classic version, there’s a simple pleasure in mixing white cabbage and carrot with mayonnaise. I’m also partial to a vegan slaw, opting for oils to bring veggies together instead of eggs or dairy. However, the recipe I’m sharing with you today is probably the one I make the most – or some version of it, anyway. A good variety of veg mixed with yoghurt, lemon and fresh herbs. Grilled Blue Cheese on Rye with Autumn Slaw

I had never had a grilled cheese until the day on which I write this blog post. Why didn’t one of you tell me about this? “Hey Cate, you know that thing people in America eat? The cheese sandwich fried in butter in a pan until it’s crispy and oozy and delicious? You really should give that a go”. That’s all it would have taken, people. As much as I keenly encourage consumption of delicious carbs, fat and sugar – particularly at the weekend – I feel it would be irresponsible of me not to offer you up something in the way of a healthy side. It’s nearing BBQ Season for the braver souls here in the UK, and I’m not about to tell you that chicken wings and burgers are going to boost your metabolism. So to join in the BBQ vibe yet remain in the constraints of this week’s theme, I thought I’d share an exceedingly healthy side dish that you can add to your delicious rack of ribs and know that you’re consuming something of use to your body. Homemade coleslaw This recipe was inspired by the most amazing take away joint ever to exist, Pizzaface. If you’re lucky enough to be a citizen of Brighton, too, you have to try this place. In a nutshell, it’s beyond restaurant quality pizza delivered right to your house. Anyway, they do this great seasonal coleslaw that’s herby and crunchy and delicious so I’ve tried to recreate it, pretty successfully I might add. Coleslaw is notoriously fattening because it contains a few artery clogging ingredients – namely full fat cream, so this recipe calls for 0% yoghurt (the brand I use …
