Spaghetti with Feta, Purple Sprouting Broccoli and Pine Nuts

Spaghetti with Purple Sprouting Broccoli, Feta and Pine Nuts

I have once again allowed months to pass without giving anything I’ve cooked its rightful immortal home on my actual blog. In my defence, I’ve moved house and had probably at least two quarter life crises in the time since I was last here. I’m now fully settled in a little caravan in the Kentish countryside and therefore hope I might find myself back into the swing of properly transcribing anything I knock up that might be of use to you, on an at least semi-regular basis. If I continue to fall short, remember you can always find me on the social media profiles linked at the bottom of this post. This recipe is one I’ve made three or four times over the last month or so, and eaten on my front step in the evening sunshine (or, more often, at my kitchen table staring out at the rain). It’s very quick, nice and substantial and just tastes good. I’d not usually try and police the quality of a particular ingredient you use, but I …

4 Quick, (Mostly) Vegetarian Dinners for Spring

Typically, the weather is yet to make up its mind about which season we’re currently experiencing. I’ve been pushing on with spring regardless under the guidance of the calendar alone – sometimes eating outside, sometimes on the sofa under a blanket wondering how long it’s been since I’ve seen the sky. That’s April for you. Quick, easy dinners that can be rustled up on a weeknight after a long day at work were my most requested post last year. This year (now that I have a proper job where I have to actually use my brain) that’s all I have time for anyway, so you can expect plenty of these in the months to come. Spaghetti with Tuna, Capers and Lemon Boil 150-200g spaghetti in salted water according to pack instructions. Reserve about 1/4 cup of pasta water just before draining. Put it back in the pan with the splash of pasta water and add the juice of a lemon, a can of tuna, a tbsp capers, a generous knob of butter and a drizzle …

Vegan Creamy, Garlicky, Lemony, Green Pasta Sauce on Cate in the Kitchen

Vegan Creamy, Garlicky, Lemony, Green Pasta Sauce

I have made this pasta dish twice this week because it’s super easy and it makes me feel smug to eat two types of greens in one go. It’s also a pretty great go-to for me because each of these 5 ingredients are things that I almost always have in.  The pictures I’ve managed to get of this recipe are just not ideal, but my desire to share it with you overpowers my desire to look like I take really great pictures of food so whatever. Here we are. I should warn you that the 1 garlic clove in this sauce is raw, and therefore packs a punch both flavour-wise and odour-wise. If you’re not into that, just go ahead and skip it. Personally, I love it. And raw garlic is increds good for you, so that’s why it’s in there. You’ll notice that I’m using soya cream again (I used it in my squash pasta sauce last week). There’s been a carton of the stuff in my fridge at all time throughout Veganuary, I will …
