Creamy Vegan Kobucha Squash and Sausage Red Pesto Penne

This week, I found a kobucha squash (first of the season) nestled in my veg box next to a big bag of spinach and this recipe was born. I used veggie sausages simply because they’re my current favourite source of protein, wholemeal as opposed to standard pasta because the nuttiness lends itself so beautifully to the autumn vibes and red pesto to round off the sweetness of the squash. I’m breaking a few rules of mine in terms of pan usage here. If I can get away with it, I’m very much a one pan girl. Here, we use at least three. There’s pasta to be cooked, an onion to be caramelised and squash and sausages to be baked. Sometimes, it just can’t be avoided. Vegan Creamy, Garlicky, Lemony, Green Pasta Sauce

I have made this pasta dish twice this week because it’s super easy and it makes me feel smug to eat two types of greens in one go. It’s also a pretty great go-to for me because each of these 5 ingredients are things that I almost always have in.  The pictures I’ve managed to get of this recipe are just not ideal, but my desire to share it with you overpowers my desire to look like I take really great pictures of food so whatever. Here we are. I should warn you that the 1 garlic clove in this sauce is raw, and therefore packs a punch both flavour-wise and odour-wise. If you’re not into that, just go ahead and skip it. Personally, I love it. And raw garlic is increds good for you, so that’s why it’s in there. You’ll notice that I’m using soya cream again (I used it in my squash pasta sauce last week). Popeye, the internationally renowned cartoon sailor, had the right idea when it came to greens. Long before superfoods were even a thing, he was chugging away at can after can of iron-rich spinach to make his biceps level up Mario-style. Despite not being a nautical hero on a never ending quest to impress a lady named Olive Oyl, I do need a good dose of iron every day – especially now. Today marks the beginning of my 6 weeks of veganism. You heard me correctly, I am doing the vegan thing. I recently watched Vegucated on Netflix hoping to learn a little more about the wave of veganism that is sweeping the nation, and see how three New Yorkers fared without animal products for six weeks. The facts and figures that made up the argument for the vegan diet ranged from Co2 levels to scientific research into the causes of disease in the modern world and all in all they were pretty convincing.
