Piccante Courgetti

This is literally a 15 minute meal, 10 minutes if you make it more than once – habit is a wonderful thing. I’ve been looking in to the 5:2 diet lately and one of the most interesting things I picked up on while flicking through the recipe books was the use of carrots and courgette instead of pasta. It’s pretty inspired. So I gave it a try and my whole face lit up when I realised that it actually twirls right around your fork when you eat it just like spaghetti. I’m hooked, I’d go so far as to say that this is my new favourite thing (I’ve had this meal three nights in a row and I’m still not bored of it). It’s enough to fill me up at the moment, but those of you inclined to bigger portions might prefer this as a starter or light lunch. Budget Beansprout Stir-Fry

So, vegan on a budget. I’ve always been a scrimper when it comes to food shopping but since firing up my food blog I’ve started to put more of my pennies in to get the best culinary results out, so I thought it was about time I took myself back to basics and cooked up some cheap vegan food. This recipe will serve 3, coming in at  £1.75 a head. I worked out the price of each ingredient (which was a total nightmare by the way, I’m a dab hand in the kitchen but a maths genius I ain’t) by calculating how much of it would be used, so the full price of, for example, hoisin sauce, would probably hike that total up. All costs are based on Sainsbury’s. I finish work every day at 6pm, so I usually hit the supermarket at around 7. Save-me-from-Domino’s Stir Fry

If you’re a regular reader of this blog, you’ll know that yesterday I travelled all the way from North Devon back to Brighton, if that’s not a familiar sounding journey to you I’ll simplify it by saying it’s hours and hours and hours of driving. And if you’re a regular person, you’ll know that coming home after being on the road for hours and hours and hours of driving makes it extremely difficult to resist the urge to hunt online for Dominos codes that will get you carbs as far as the eye can see for around £20. Being the born-again healthy cook that I am, I soldiered on and rustled up this stir fry. The key to surviving the struggle of not logging on to just-eat or calling your favourite Chinese is always having something in the cupboard that can be transformed in to a quick dinner.
