What Do Vegans Eat? | Veganuary Food Diary Week 2

It hasn’t been a full week since my last food diary but I figured I’d just get these out as and when. Who needs structure and routine, right? I’ll level with you, this has been a less than impressive week. I cheated one night and just ordered a pizza because I couldn’t cope with that cooking-from-scratch life all of a sudden. I’ve eaten nowhere near enough vegetables. I drank too much and ate a lot of beige food. But that’s cool, that’s why I’m recording a food diary. So that I can show you the legit ups and downs and ins and outs of navigating food as a temporary vegan. I’ve been really busy this week, and I think that’s reflected in my diet. I didn’t make good on my promise to myself that I’d eat more pulses, but there’s always next week. What Do Vegans Eat? | Veganuary Food Diary Week 1

This is my fourth year taking part in Veganuary, but my first that I’ve decided to keep a food diary. This is because for omnivorous people that have never delved into veganism themselves, what a plant based person eats day in day out appears to be of great interest. It’s also a good exercise for me to carry out so that I can monitor what I’m eating too much or not enough of, and see where there might be gaps in the essentials that I need to be getting into my body. I’ve got a few reflections and observations following my first week of the challenge which I’ll save til the end. For now, here’s what I’ve been eating all week: Monday Breakfast 16 vegetarian spring rolls from the ASDA frozen party food range. Dipped in sweet chilli sauce. Veganuary 2016, My Final Thoughts

Does “my final thoughts” sound a bit “this is a suicide note” to you? I wasn’t so sure about it, but I wanted it to sound important enough for you to click on it. How am I doing here, validate my choices please. To clarify: this is not a suicide note. Shall we just jump straight in to the first of the three areas we gots to talk about? The general attitude towards vegans This was one of the most irritating things about the whole process for me. It feels like people are so, so angry with vegans just for the way they’ve chosen to eat. I know that this goes both ways, and we’re gonna touch on that in my next point, but I really want to address this first because I think it’s important and doesn’t really get discussed very often. If I’m eating something that’s vegan, people seem to be very interested in trying to ‘catch me out’ with how healthy (or rather unhealthy) it might be. Calling out artificial ingredients or …
