Chilli and Lime Pumpkin Seeds

If there’s one thing that’s universally linked to Halloween, it’s pumpkins. Oh, how I would have loved to write a post on pumpkin carving! Unfortunately, my unsteady hand and blunt kitchenware prevent me from having anything to show off about in that department. I can, however, provide you with a delicious recipe for flavoured pumpkin seeds. These are hot, sweet and sour – the perfect combination for the chilly season that’s now upon us. 1 cup (150g) pumpkin seeds zest of 1 lime juice of 1/2 a lime 1 tbsp chilli flakes 1 tsp dark muscovado sugar 1 tbsp olive oil Pre-heat your oven to Gas Mark 2 (conversions here) and grease and line a baking tray with baking parchment. Mix the sugar, olive oil, salt and lime juice together then use the mixture to coat the pumpkin seeds in a large bowl.
