You may have noticed that over a week has passed since the Veganuary start date, and I’m yet to post a recipe until now. I’m pleased to inform you that this recipe was worth the wait. This is not a 10 minute meal, you’re gonna have to do a few different processes and yeah, there might be more dishes than usual. For that I apologise. I hope you live in a household where the cook doesn’t have to do the dishes (I don’t). What this is, however, is a meal that you can cook for your non-vegan friends and have them go “Wait, this is what vegan food tastes like? Why didn’t you say something before? So Just How Bad Is Vegan Cheese..?

Last year when I took part in Veganuary, I just didn’t try hard enough. I didn’t bother to seek out things like actually tasty tofu recipes and, more importantly, I neglected entirely the world of vegan cheese. Having looked much more closely this year at what’s out there in terms of plant based “cheeses”, I think my end resolution will probably be to make my own using nuts – that said, I haven’t tried that yet, so don’t hold me to it. The reason for this is: there’s a bunch of crap in vegan cheese. For me the whole point of temporarily adapting plant based diet is to ditch unnecessarily processed foods and go for whole ingredients that are unlikely to piss off my brain or digestive system. My Savvy, Snazzy, Luxury Christmas Dinner Party

Nectar gave me £120 of points (that’s 24,000 points) to throw my dream Christmas dinner party. It had to be fun, it had to luxurious and it had to be extravagant.
